We celebrated the dedication of our little man this past Sunday. It was a bittersweet event. As we honored our new son and gave him back to God our family gave my SIL to God in her final rest.
Since the MIL couldn't make her meaty beans for the occasion I took the lead. Every celebration is not complete without MIL bringing this dish. I made it. One more recipe to cross off in completion of her cookbook.
I am glad to be home and hopefully can re- establish our family routine. For the past month we have been traveling to visit with family and friends to show support and say goodbye to SIL. I am glad to be home. Hopefully we can rest as a family and love one another a little more.

Some things...
I haven't been blogging much lately. Life has caught up with me. I am feeling very blah...
So just to keep up on some things. I have made Arroz Con Pollo from my MILs cookbook. I have completed most of the entree recipes. I still have many many cookies, pies and candies looming over my head. I am not much of a baker. Sometimes it is good to work on things that are out of our comfort zone.
Life is not always comfortable. There are no guarantees. Let's appreciate what we have and love one another.

Beef its what's for dinner.
When I was a kid I took a lot of things that my parents did for granted. We always had fresh organic produce from Granny's garden. Dad ordered a whole cow every year. Dad even went fishing to catch wild salmon. I can even remember standing in line at the "well" with our gallon jugs to get water. I never thought about how great that was. It was a part of our life. I even went as far as to think my parents were hillbillies. We had to pick our tomatoes while everyone else went to Kroger.
This time in history we really don't know where our food comes from anymore. ...
My dad told me a really funny story tonight. He ordered a side of beef every year. It was usually in cuts or ground beef. He would just go pick it up.
One year he buys a cow from his BIL's farm. He drives to KY to pick it up and the thing was still walking around. His BIL gives him a gun and tells him to shoot it. My dad said he didn't want to kill the cow. It was walking around and looking at him. He decides to be a man. He had to shoot it three times. Finally, a neighbor brings over a back hoe and dad had to put the cow, whom he had just shot, unto the back of a pickup. While dragging it into the pickup it poops all over him. He decided then and there that it would be the last time he bought a cow from BIL.
That story was hilarious to me. I can only imagine my timid father in that position. If it were me, I wouldn't have been able to do it. Poor dad!

Snowed in again
This weekend I completed two more recipes from the MILs cookbook. I made oriental orange and almond salad and cheddar and black olive canapes. Both recipes were extremely simple.
The salad was excellent. I compare it to the Mc Donalds asian salad. The canapes were good, but way too salty. The recipes ask for an entire can of black olives and a cup of cheddar cheese. It also says salt and pepper to taste. Trust me that it dosen't need salt.
My culinary pet peeve is overly salty food. So far in all of the recipes I have cut the salt in half or eliminated it entirely. 12 down 65 to go.
Back in December I made the news years resolution to complete every recipe in my MILs recipe book. 77 total. The hard part will be that half of the recipes involve baking. I do not like having mass quantites of sweets in the house. My husband and I have no self control when it comes to tummy yummies.
This week I am going focus on trutles and toffee.

Mommas Big Cookin' Weekend
This is my snowed in big cookin' weekend. Saturday was the husbands birthday. I made him biscuits and gravy, ranch baked chicken, twice baked mashed potatoes and lemon squares. I really out did myself.
The most challenging was the lemon squares. A cool little tip my MIL told me to use: when trying to get the zest of a lemon, just peel it like and apple and throw it in the food processor with the other ingredients. No grating necessary. It worked like a charm and was very easy. The lemon squares had a slight after taste. I figured it was because the lemons I used had a slight green to them. Last time I send the hubby shopping for produce.
Lemon Squares
Crust:
2 cups flour
1/2 cup powdered sugar
1 cup butter
Filling:
4 eggs
2 cups sugar
1/4 cup flour or 1/3 if you think its runny
1/4 cup lemon juice
Zest of two large lemons
For the crust, mix powedered sugar, flour and butter and pat into a 9X13 pan. Bake 20mins at 350 degrees.
For the filling, mix the egg, sugar, flour, lemon juice and zest. Pour onto baked crust and return to a 350 deg oven for 25 mins. Sprinkle with more powedered sugar while hot. Cool and cut into bars.
I have now completed 10 of 77 recipes in my MILs cookbook.
Also, my brother called from his base in AZ to wish Dan a happy birthday. They did some training missions which required hiking in the cold desert mountains. This reminds me that I need to finish knitting his army (love) socks. I am going to work on them today.

Sewing day
Today I made my first sewing project. I made a brown and pink polka dot jumper for the divine little Miss M. My mother in law is a very patient soul. She read the directions with me and guided me along nicely. It could have been much worse.
Having made an article of clothing, I can now appreciate the things we wear more. Understanding everything that goes into an item gives me a great appreciation for clothing and those that make clothing for a living.
It took about four hours to make one little dress from start to finish. Once I am comfortable making this dress again on my own, I would like to keep making them. My goal is to make her summer dresses to play in. I hate buying summer clothes for kids. I think most summer clothes are too expensive for the quality. Last year Miss M wore Target brand summer clothes that I got on sale. I think with clearance items I only spent $27 for the entire season. Don't get me wrong. I am not usually a bargain shopper. Summer clothes are just not my favorite to spend money on.
Sewing was a gratifying experience. Normally, if I knit something it takes more than I sitting. Today I made an entire article of clothing in four hours. Nice work! I am proud of my first sewing project.
